Indian Cookery - The Best Halibut Curry

I was first treated to this fantastic dish when I was studying at CSU Sacramento in the mid 80s. At the time, there was an Indian restaurant - the only Indian restaurant in town - that my friends and I visited every weekend.

At its most basic, kicharee contains rice, mung beans (a legume related to lentils), ghee (oil from butter) and spices. All of the ingredients are inexpensive and available in groceries and health food stores.
 

 


In a dry frying pan, add all the seeds, peppercorns and cinnamon stick and fry over medium heat until the spices begin to smoke. Be sure to toss them around a bit so that they toast evenly. Remove to a spice grinder or pestle and mortar and grind to a fine powders.

A Missi Roti is actually a normal roti, made with the normal dough as described earlier, to which various other types of flour and spices have been added. There isn't any fixed recipe for this - it's each one to his own here. One simple example would be to mix equal proportions of whole meal wheat and gram flour with some red chilli powder, salt, kasuri methi and perhaps a little cuminseed, add some water and make a soft dough. You could also knead in a little oil if you like. When done, cook on a hot griddle like a normal Roti.

To make the sauce, in a saucepan pan, heat the Ghee or olive oil (if using) and stir in the onion. When it becomes translucent, add the garlic and zucchini and cook for 2-3 minutes. Add more ghee or oil if onions and garlic start to dry out. Stir in the tomato paste, sugar, parsley, cilantro, and lemon juice.

The Tibetan people are very hospitable, and it is their custom to offer highland barley liquor to their guests and visitors. People put a little ghee on the mouth of the flagon or the cup as the "pure white decoration". The host will fill the cup, and you take a sip of the liquor again. After the host fills your cup for the forth time, you have to bottom it up.

One of the more outlandish home remedies for an earache actually involves using human breast milk. This may be a good option for a new mother whose child has an earache. What you must do is combine some breast milk with a bottle gourd that's been ground up into paste. Warm this combination up slightly and then apply to the ears. It's known to be a really effective pain reliever.
